Comfort Food

 

Food in Texas is as varied as are the state’s cultures. But I grew up in an area where many people immigrated from the Deep South, and was raised on a variation of Southern comfort foods. If you haven’t tried them, be careful when you do because you might become addicted, which is no bueno for the ole arteries. A few of my faves:

  • Fried okra (not slimy when crisped up in a vat of fat)
  • Grits (I prefer mine with ketchup)
  • Black-eyed peas, with ham (no fat back for me, y’all)
  • Biscuits and gravy (80-weight, as in 80-weight oil)
  • Pecan pie (no such thing as too much Karo syrup)

Today is World Gratitude Day – Can you guess what I’m grateful for?

Y’all got that right…comfort food!
